In general, I have found, hourly basis is less risky although a fixed price
with several deliverables can be more profitable. It depends on your
experience in making estimates.

Most contracts are very easy for your employer to terminate unless you have
a non-perfomance clause. Hire a lawyer to review your contract. Of course,
your client is not obligated to include your lawyer's recommendations but at
least you will be aware of the limitations of the contract you're being
asked to sign.
