The best interviewing advice I ever received was to ask questions that make
them draw on their past experience (such as "give me an example of how you
managed multiple projects"), instead of asking theoretical questions (like
"tell me how you manage multiple projects").

If you can get them to speak about actual experience, you tend to get a much
better idea of their actual skills, instead of how they think they'd like to
act in the future.
