You just select all the tables and modify the appropriate setting. It
is also fairly easy to create a macro that takes the properties of a
modified table and applies them to the rest of the tables in the
document

I admit that I have never tried this from a master document page, but
the sub docs work fine. 

If anyone wants specifics, let me know and I'll dig them out.
