Anyone who's used a computer for more than a few months is used to the term "field," but my fear is that *very* naive beginners may stare at the screen looking for green grass, or golden grain, or something.

That could probably happen. It might be a solution to explain teh term "field" the first time it comes up in a procedure (Like "enter your name in the Name field - the text box labeled 'name' at the top of the screen".)

I wouldn't use "text box" all through a manual, because that would probably confuse more experienced users.
