So, are you saying that if one does the research (counting trees in the
forest), and published as fact that, e.g. there are 10,380 pine tress in
Yosemite Park, that is NOT 'copyrightable'?

Exactly.

I'd say that is the type of
'esoteric', NOT-everyday run-of-the-mill common knowledge that does not fall
under Fair Use.

Fair use has nothing to do with how common the information is. As I said before, copyright law is concerned with the expression of information, not with the information itself. (Unless the 'information' is invented, such as the plot of a novel. In this case, the 'information' is the result of a creative process and not information in the scientific sense at all.)

You may want to read an introductory work on copyright, where the concepts are likely explained more clearly than I manage to do here.
