Yep, I agree. We don't do the tear off look, we just captured parts of those long screens and followed each piece with the table that contains the field names and descriptions for each field in that section. We also included text at the beginning of that particular section that said the step is too long to fit on a single page, so we broke it up. So you get the following:

Not a solution, but an alternative: how about "tear-offs" of segments of the screen?
