OpenOffice.org exports to Simplified DocBook, which is adequate for most
documentation needs. Since OpenOffice.org's native format is XML, the resulting
DocBook output looks fairly clean from what I've seen.

Other advantages: you can work in a WYSIWYG interface, and it's free. I can't
speak to the other software that has been suggested, but structured FrameMaker
strikes me as unnecessarily fussy; personally, I found it disappointing.
