Word's Help actually helps on this question! Search for "insert footer",
and from the displayed options, select "Create a different header or footer
for each section".
For the page number format, (i.e. switching from "i" to "1", while in View
Header/footer, click on the "Format Page Number icon". This is where you
will set the starting page number for the third section (your doc content)
back to "1". The advantage to using this method is that your front matter
can be any number of pages and Word will automatically increment the
number.
