I'm going to be teaching a technical writing class to junior-level
university engineering students and wondered what the group thought it was
important for them to learn.

As part of the class, you should introduce them to the documentation necessary for the software development life cycle. If they understand the need for documented requirements and design BEFORE coding, maybe we would get some good software...
