Dan was worried about being able to produce a detailed manual
for a complex technology in two weeks.

It's probably just another sign of their total disregard for
what your job entails that leads them to make such demands.
Have you considered that you are actually in a pretty good
position to "push back"? In fact, the two-week timeframe is
so short, that if the worst happened and they fired you or
you quit in frustration, they still could not hire a replace-
ment, bring them up to speed, and have them write the manual
anywhere near to what they expect.

You probably have little to nothing to lose -- go back to
them and get more time to do the job properly.
