Geoff wasn't the first person to make this suggestion - just the one whose message I happened to read when I had a spare moment to respond.

It's probably true that most people wouldn't observe whether sentences were separated by one or two spaces. However, that's not to say that they wouldn't notice. In my experience, even people with no interest or background in design often notice when something is slightly off. They can't explain why, or pinpoint it, and that's as it should be. Everyday typography shouldn't call attention to itself. In fact, if it does, that's probably a good definition of failure. But people often will notice that something is wrong. Moreover, if given a choice, tend to prefer the well-formatted in version (in this case, single space).
