Can anyone recommend a good book or source for writing manufacturing and
testing documents (for hardware)?

A good source for testing information of all types is www.stickyminds.com.

There is also good information available at www.labcompliance.com. Although it is geared towards the health (FDA) field, the site has information on validation of equipment.
