You can search for "Quality"

If you look at the Software Capability Model, Key Process area "Software
Quality Assurance" you will find a lot of information of the types of
documentation that needs to be 'handled'

In the Capability Maturity Model - Integrated you will find Quality
Assurance in all of the Keep Process Areas.

This information may not describe the 'organizational structure' of a
Quality Assurance Department, but will give you some idea of what must be done,
tracked, and audited for a 'Mature' organization.

There has been a lot of work done on Quality, notably Deming, and others,
that may give you some insight into the structure of a Quality department.
