John Malin's helpful comments are pretty much on the mark. Some wiki engines enable quite sophisticated access methods, so you could have levels of editing access. I have installed and run a number of "dual-mode" wikis with password access for editors and non-editing view-only mode for visitors. You can easily pick a wiki engine that suits your needs for both security and ease of use. I like the engine from UseMod at http://www.usemod.com because it's a single-file installation (external config file option, if you wish) and very easy to tailor to your needs.
