GIMP rocks! A little while back, I downloaded Inkscape because of a post on this list. I haven't had a chance to really get into it, but it looks pretty cool. If you're into 3D modeling, there's always Blender.

I took a _quick_ look at doxygen and I don't see how its different from nDoc.

As for OpenOffice.org, I haven't really had time to get into it either. I use it for personal stuff and school, but not for work. I tried making OOo the only office tool on my machine but due to family pressure, I had to put on MSOffice as well.
