Once again, after searching to no avail and then posting, I find the
answer almost immediately after posting. Here's a little macro that
works great:

Sub RemoveTableShading( )
Dim tbl As Word.Table
For Each tbl In ActiveDocument.Tables
Tbl.Rows.Shading.BackgroundPatternColor =
wdColorAutomatic 'or any other color
Tbl.Rows.Shading.ForegroundPatternColor =
wdColorAutomatic 'or any other color
Next tbl
End Sub
