Piffle! I carefully avoid having remote access, including company e-mail.
On those _extremely_ rare occasions that anybody gets a work e-mail from me
in the middle of the night, it's because I'm in the office when I send it.
Like I say.... extreeeeemely rare. :-) Not totally unheard of, though.

When I'm on vacation, I'm unreachable and I don't reach either.

When I return, I tackle the piled-up mail while getting back up to speed on
everything else. If anybody is frantic about something, they repeat and
escalate.

I'm the only one who does what I do, here, so there's really nobody to refer
them to. When it comes to scheduling projects and the documentation
component thereof, I give plenty of advance notice when I book chunks of
vacation. That should be enough.
