As in many other things, I follow my own path in this matter, choosing to
disregard both conventional wisdom and the Microsoft Manual of Style for
Technical Publications. I would write it:

"Choose the *Admin* module >>*Scheduling*>>*Room Maintenance* menu item."

In addition, I have an autocorrect that changes the ">>" to a single
right-pointing triangular arrow symbol and automatically formats the text
using my Emphasis character style.

I prefer to write these sorts of things in a way that I'd feel comfortable
actually saying out loud and believe (without having actually having done
any research to validate my belief) that readers will better understand what
I write if it's written that way.
