The Word 2003 function is Tools > Protect Document. As PT noted, this is
not to stop template reminders, but is to prevent users from using any
styles other than those you specify.

In Word 2007, you get to it from the ribbon's Developer Tab, where you'll
find the Protect Document button. (If you don't see the Developer Tab, go
to the Word Options dialog from the "Pizza Button" [the round microsoft
logo-ish thing in the top-left corner], and from the Popular section,
select "Show Developer tab in the Ribbon".)
