Tools > Advanced Editing > Link Tool

Double or right click the link to open its "Properties" dialog and select the "Actions" tab. For a hyperlink, there should be an "Open a web link" item in the Actions list. The Edit button should open an "Edit URL" dialog where you can edit the link.

This is in "Acrobat 9 Pro Extended," which is the only version I have access to at the moment. If it doesn't work in the flavor of Acrobat you have loaded, let me know. I have other flavors I can check when I get home tonight.
