I don't have any suggestions for Windows XP to 7 - I use XP at work and 7 at home, but I also suffered through the searing pain known as Vista (which I also have at home) so anything short of a complete overhaul now feels like a walk in the park. Others might have tips ... I don't think that the transition should be that bad since you've skipped over Vista.

Office 2003 to 2010 - that's a different matter. This can take some getting used to since the interfaces for the different applications have changed considerably. When I was making the change, I found cheat sheets to be incredibly helpful. Perhaps you will too:

http://www.zdocs.net/Word-2007-Cheat-Sheet-Quic--PDF.html
http://www.zdocs.net/Excel-2007-Cheat-Sheet-Quick-reference-charts--PDF.html
http://www.zdocs.net/PowerPoint-2007-Cheat-Sheet--PDF.html

The cheat sheets address 2003 to 2007, but 2010 is quite similar to 2007. (I've used all three and have at times had to go back and forth between them, so the sheets helped to keep me sane.) This article might also be worth a look; it specifically addresses how to find Office 2003 commands in Office 2010:

I need a good mailing list to help with the shock of leaving Winxp and
getting used to Windows 7. Suggestions?
