Just select the list, and use Table Sort. When you add things, just add them to the bottom, select the list and sort it again. You can record a macro for the Table Sort part, and make it a button on a toolbar. You can also use a 1-column table (with invisible borders) so you can just click once at the top to select the whole column, then click your macro button.

In any case, you have to select the list somehow. Word can only *automatically* update a list that has numbers or letters in sequence. Alphabetical order by first word isn't, by itself, considered a list sequence except in Table Sort.
