Try the following books

The Systematic Design of Instruction by Dick and Carey, ISBN 0-673-99084-2
is often described as the Bible of instructional design.

Making Instruction Work by Mager, ISBN 1-879618-02-8 is a step by step guide
to designing instruction. I consider Mager to be very readable. You can
get it separately or part of the Mager 6 pack.

Simply do a web search on instructional design and you will have more than
you can handle.
