If you simply type the name of the output file as file.ps, Word will append .prn so the file will be named file.ps.prn. To avoid this, drop down Save As Type and select All Files, then type your filename as file.ps.

If you're macro inclined,
ActiveDocument.PrintOut Background:=False, PrintToFile:=True, _
outputfilename:="c:\WatchedFolder\file.ps"

.ps is not available from the Save as type: drop-down list, but you can type
filename.ps in the File name: field, and that's what you will get. I haven't
had any problems with it.
