What type of demo are you creating? If this is mostly screenshots with
motion - a few menus, mouse clicks, etc - and you need a limited amount of
interactivity, you might try Macromedia's Director. While my experience with
this tool is limited to a few hours of "exploring", my last employer (an
interaction design firm) used it extensively to show "proof of concept" type
demos of suggested interactions to customers.

You just capture screenshots and menus, and then animate them. It's fairly
easy to figure the tools out, and you can create swf's as your output -
which allows you to embed the "demo" in HTML pages and use a browser to view
