Amy,

I think it's always best to honest about your salary
expectations, But only give them the information they
as form: if they just ask what your expectations are,
then tell them, without revealing what you were paid
in your previous job. If they ask you what your
previous salary was, I would answer honestly, but then
say that you are expecting a higher salary in your
next job. Be prepared to back this up.

I would put your work experience first on your resume;
then your education second. When I review resumes,
it's relevant work experience that I look for first.
