I've been learning about business process modeling in an object-oriented development environment. I'm not sure that's exactly what you're interested in, but here are a few resources I've found.

If you are indeed interested in the UML, I think the standard intro text is UML Distilled by Martin Fowler. I'm also reading an interesting book by Peter Coad called Java Modeling in Color with UML.

There is also an organization called the Workflow Management Coalition (terrible website but some not-bad PDFs): www.wfmc.org. They are not specifically object-oriented but are trying to standardize workflow.
