With the TouchUp Text tool selected (outlined T, Acrobat 4 or 5):
- control-click where you want the label to appear
- type the text
(select the text, right-click and choose Attributes if you want to
change text properties).

This and many other shortcuts appear in (116K)

(as mentioned by others: if the source files are available, it's better
to add the labels there)
