I've tried inlcuding mailto:"foo -at- cdphp -dot- com" in the WWW link URL box.
When I click on the link, IE opens and tries to access cdphp.com" instead of opening a new mail.

What's the problem you are encountering? I use mailto: links all the time. Just type it into the same place you would a Web URL.
