However, these problems aside, you seem to be annoyed that someone is restructuring your work at all. If so, then you might want to look closely at the suggestions, or solicit outside opinions before getting annoyed. Editors who can make useful structural suggestions are relatively rare, and can be invaluable to a writer.
The fact that they do so is no reflection on the quality of your work (although it may reflect your work load). Even the best writers can benefit from working with a good copy editor. If you've got copy editors, consider yourself lucky - not slighted.
