Suppose you have a table of contents or index you've automatically
generated in MS Word (2000). Then you select it. Does anyone know the
keystroke to turn the field into plain text. Searched the Word help,
couldn't find an answer (what a surprise), couldn't find the answer with a
google search either.

CTRL+SHIFT+F9 will turn any selected field into plain text. A ToC or index is a field.
