Thanks to all who made suggestions - problem solved. Most tables have a
blue fill with white text. Same text used but overridden to black text.
However, somewhere along the way custom shading (white) had been applied
to (at least some of) the cells. Resetting fill to None and re-jigging
the heading text seems to have solved it.
Thanks again - one writer who's definitely in TGIF mode.
