My understanding is that when you embed anything as an object, whether a spreadsheet or a graphic, Word must add a large chunk of support code to define the creator application and load that application should you inadvertently double-click that object so as to edit it "in place".

The usual approach should instead be to "insert" the graphic (under the Insert menu), and select the "link to file" checkbox if you want to preserve a link to the graphic:

As you discovered, that's the more efficient approach.
