Unfortunately these lists are locked down and you cannot change them.

While I'm not certain what you are seeking, you might want to investigate using Build tags.

Is there a way to add my own items to the Topic Properties to do list?

As well, can I also modify the Status list items ("In Progress", etc.)?

What I'm looking for is a finer degree of topic classification, like "First revision", "Second revision" and so on. "In Progress" seems to cover too much ground.
