At first glance, these look more like workarounds than Word features but I'll test them out when I get five mins. Geoff Lane mentioned using File > Properties > Custom and {DocProperty "ProductName"} for variables and this is pretty close to FrameMaker's user variables, although FM also allows you to specify the character format for a variable.

Conditional Text: There are multiple methods. My favorite is the
following:
1. Create a single Word document with styles for A, B, and C. Each of
the three letters has its own set of styles in the document: Body Text
A, Body Text B, etc.
2. Create three different templates: In Template 1, style B and C are
hidden text. In Template 2, style C is hidden. In Template 3, none of
the styles are hidden.
3. Conditional text is displayed according to the template that you link
to the document -- the document itself doesn't change.
Additional, equally reliable methods include:
* "includetext" fields to take content from different subdocs
* Database-controlled, macro-driven conditionals.
* The IF field, which tests for bookmark (variable) values.
* Steve Hudson's free markup tool (see TECHWR-L)

Sideheads: Here are Geoff Lane's instructions:
1. Create your document with a wide left margin.
2. Create a style (Sidehead) with:
- the typographical specs you need
- a suitable negative left indent
- a tab stop that corresponds with the actual left margin.
3. Format your sidehead with the sidehead style.
4. If the sidehead is shorter than margin, add a tab to the sidehead,
otherwise add a space or tab (experiment with different whitespace to
get the effect you want).
5. Hide the paragraph mark at the end of the sidehead. To do this, click
the Show/Hide button on the Standard toolbar (the one that looks like a
paragraph mark), select the paragraph mark, then press Ctrl+Shift+H to
toggle the hidden text attribute on. When you hide non-printing
characters, the sidehead is on the same line as the running text.

I guess these features have different names in Windows Word because I
just checked the help in Word 2003 and couldn't find the first three.
