in addition to Word and Excel:

iGraphx Flowcharter
Paint Shop Pro
Nitro PDF
if you're doing manufacturing work instructions, a decent digital camera with video capability
Picasa 2
something for capturing screen shots (but I can live with Print Screen if I have to)
could not keep track of anything without Access
and a scanner with a working "scan" button
Corel if I can get it (yes, in addition to PSP)
and enough flash drives to keep my own doggone daily backups
