How do I hide/change advanced PDF metadata?

I am using Acrobat 9 Pro, version 9.2.0.

Can anyone tell me how I can change or hide the advanced PDF metadata pdf:Creator, pdf:Producer, and pdf:ModDate?

When I select them and click Delete, they don't go.
