You can't really evaluate the construction of a resume unless you've received it directly from the applicant. This means that applications received from outside recruiters and your own web site if your site is parsing data from uploaded resumes is pretty much useless for this purpose.

I usually just ask candidates a few questions about how they've dealt with information received from others in Word format to see what (if anything) they do to prevent style corruption from occurring, and how they deal with existing documents in which it may already have occurred.
