I know that conventional wisdom is to use the last ten years of experience
in a resume. But I landed a ten year employment stint because of specific
program experience from 20 years prior to that. I do edit the list from
time to time in order to keep the number of pages under five.

On the subject of age, I go with all experience, and let the age
discrimination thing fall where it may. If someone doesn't want grey hair
writing the manual, I prefer not to take it any further.
