Yes you can. There are issues with it, mainly because designing in SharePoint is a PITA. We use SharePoint mostly as a web server, but we write our own pages manually, which are fairly simple. It allows us to organize and present functional documentation in a manner that reduces the need of a user to look through a pile of unorganized presentation.

For those outside of your firewall it is problematic.
