I think the reference to startup environment is the key here. They're looking for someone who can wear other hats when required. If you meet their requirements, make it clear during your interview that you expect compensation to be on a par with the most expensive item on their laundry list for you to come onboard.

When I was interviewing to manage tech pubs groups, I always made the point that tech writers had to have the same salary grades and pay ranges as engineers if they wanted me to recruit truly tech-qualified team members. If they didn't get that, then there was no reason for me to be interested in the job.

Never forget that while they are interviewing you, you are also interviewing them. Just because you meet their requirements it doesn't mean that they meet yours.
