Yes. This is great if you are replacing dashes with em-dashes. However, if you want to enter the em-dash at the same time that you are creating the caption, then you should insert it in the caption text box within the Caption Dialogue box by simultaneously pressing these keys: Alt+Ctrl+Num - (The last one is the numeric keypad version of the hyphen).

I don't have Word 97 but I think my technique will work.

* Place -- wherever you want an em dash in your document
* When done creating your document, select Replace from the Edit
menu (or hit Ctrl-H)
* Enter -- in the Find What box
* Place your cursor in the Replace With box and click once. Then
click on the Special button on the bottom of the page. Select Em Dash
from the popdown menu. Something that looks like ^+ will appear in the
Replace with box.
* You can then choose Replace or Replace All and Word will replace
every (or a particular) occurrence of -- with an em dash.
