I usually say "Tab away from the field", even when there is more than one way to get out of it, just to keep things simple. It seems to work.

On the first part, why mention the inactive button yet? Can you say:

Enter <whatever> in the X field and press Tab, then click Update.
Note: The Update button is not available until you Tab away from the field.

Something like that?
