I often use 3 monitors.

- Sometimes I need to compare and/or copy and paste content from one app (which could be in Word or Framemaker or RoboHelp) to another.

- If I'm creating drawings or figures, its better using one of my big desktop monitors, as opposed to my laptop screen; plus I often need to refer to information in the Frame doc to get names, etc correct in callouts.

- And I'm also constantly having to monitor/manage my email; and sometimes be using other admin programs (like Excel).

With all that going on, I may have half a dozen app windows open at the same time that I am more or less working in simultaneously. A LOT easier to do with multiple monitors to spread it all out on.

Why would a tech writer need two monitors, let alone three, which sounds like an ergonomic nightmare?

I can only look in one place at a time and I can context-switch with keyboard shortcuts and my KVM switch as fast as I could look at a different screen. Large displays with 16:9 aspect ratios provide such huge desktops that I can treat them like two displays anyway.
