I'm using Thunderbird for email.

If Mom is totally non-tech-savvy, you might want to look at all-in-one systems. I don't use them because they can't be upgraded except for memory and storage, but it doesn't sound as if Mom will be browsing the web for the latest display cards or 4K monitors.
