The Number of Pages field is only updated under certain circumstances
(printing, for instance.) You might try printing it before sending the
electronic copy. But if you make ANY changes, the field may go back to 1 -
because Word won't know what the page count is until you repaginate, print or
do whatever else updates that field.

The funny character sounds familiar, but I can't reproduce it just now.
Unfortunately, it may be a special indicator which is SUPPOSED to appear when
certain of your View options are turned on. If your client has these on,
there won't be much you can do.

But I'm not sure that's the problem.
