I don't think anyone has raised one slight possibility: this candidate
may prefer building organizations to running them, and be exceptional at
it. If you already have an established pubs organization, this would be
a negative, but if not, such a candidate might be exactly what you're
looking for if the former employers were pleased with the results. Worth
a chat and a call to some references, in that case.
