Here is the trademark disclaimer from a press release PKWare's Web site:

PKWARE, the PKWARE logo, the "Zipper Design", PKZIP, PKUNZIP, PKSFX, PKLITE, PKLITE Professional and PKWARE Data Compression Library are registered trademarks of PKWARE, Inc. PKZIP Explorer, PKZIP Command Line, PKZIP Attachments, PKZFIND, PKZOOM, Deflate64, EasySFX, AutoSFX, RegularSFX and ZIP2EXE are trademarks of PKWARE, Inc. Trademarks of other companies mentioned in this documentation appear for identification purposes only and are property of their respective companies.

Nowhere in there do I see them claiming a trademark on the word "zip."

They also use verbage such as "the industry-standard .ZIP file format."
