If you know what the text will be, you can do a Search & Replace for it
that looks for it with the Heading 3 style.

1. Bring up the search & replace window in Word and enter the text you're
looking for in the Find What box.
2. Click More.
3. Click Format.
4. Select Style.
5. Select Heading 3.
6. Enter the SAME TEXT in the Replace With box.
7. Click More.
8. Click Format.
9. Select Style.
10. Select Body Text.
11. Click Replace All.

Repeat as naseum for all the text you need to change from one format to
another.
